RAW THAI COCONUT MANGO SALAD

Ingredients
  1. Serves 2 -4
  2. 2 cups fresh coconut meat- julienne the flesh
  3. 2 large zucchini
  4. 1 large mango – julienne the flesh
  5. ½ cup arame – soaked in water until soft
  6. 3-4 shallots cut into 3cm lengths
  7. 12 cherry tomatoes cut into 4
  8. Large handful sunflower sprouts
  9. 1 avocado finely sliced lengthwise
Instructions
  1. Using a mandolin cutter finely julienne the zucchini
  2. Place all ingredients in a bowl leaving out the avocado and toss
  3. Add avocado and toss gently
  4. Add dressing and toss gently again
Dressing
  1. 1/2 cup fresh lime juice
  2. 1/2 cup olive oil
  3. 1tbls almond butter
  4. 1tsp tamari
  5. 1/4tsp sesame oil
  6. 2tbls agave
  7. 1 soft pitted date
  8. 1dsp fresh ginger
  9. 1/8tsp cayenne pepper
  10. Pinch Celtic salt
    • Process in the blender until smooth, then strain through a fine mesh strainer
    • into as small storage container until ready to serve.
