RAW CREAM OF LEEK & AVOCADO SOUP

Ingredients
  1. Serves 4-6
  2. 1 medium avocado
  3. 3 cups roughly chopped zucchini
  4. 2 stalks celery, roughly chopped
  5. 10cm piece of leek
  6. Handful of parsley
  7. 3 tsp lemon juice
  8. 2-3tsp shoyu or tamari
  9. 1/4tsp salt or to taste
Instructions
  1. Dash cayenne pepper or more if you like it spicy hot
  2. 3 cups almond milk or until the desired consistency is reached
  3. 2 shallots finely chopped for topping
  4. A dollop of nut cheese and a handful of parsley to sprinkle on top - optional
  5. Blend all ingredients except the shallots and nut cheese in a high-speed blender until smooth and creamy. If you would like this soup warm, place in oven on warm for about 30 minutes or in a dehydrator or Thermomix. Make sure it is only on warm – no more than 45C so as not to cook the soup. This soup is wonderful chilled also.
