Raw Celebration Caramel Mud Cake
(Sugar Free, Gluten Free, Dairy Free, Vegan)
If you are addicted to chocolate mud cakes then this raw version I created for my mother’s birthday was a real hit.

  1. Base Layer

  2. 1-cup macadamias
  3. 2/3 cup almonds (previously soaked for one hour)
  4. 6-8 soft pitted dates
  5. 1tsp pure vanilla essence
  1. Process All the ingredient in the Food Processor
  2. Sprinkle coconut onto the bottom of 8 or 9 inch spring form pan. This is to prevent sticking
  3. Press mixture evenly into the bottom of the pan then put into the freezer whilst you are making the filling
Caramel Filling
  1. 3 cups cashews – soak overnight or minimum of 4 hours
  2. 1 cup almond milk
  3. 2/3 cup melted cacao butter
  4. 1/3 cup coconut oil
  5. 1/4cup almond butter
  6. 2tbls lecithin
  7. 1-cup apricots – soak overnight or a minimum of 4 hours
  8. 1 vanilla pod or 1tsp pure vanilla essence
  9. 1/8 water
  10. 1/8 cup agave
  11. • Place all ingredients into the blender leaving the cacao and lecithin to last
  12. • Pour mixture onto piecrust.
  13. • Remove any air bubbles by tapping the pan on a table.
  14. • Place in freezer until firm.
  15. • Add caramel sauce – see below
  16. • Place back into freezer until ready to defrost
  17. • Remove whole pie and place on a serving platter
  18. • Add some slivered almonds/and or chopped almonds to decorate
  19. • Place in refrigerator to defrost and ready to serve.
  20. Caramel Sauce
  21. 2 cups soft dates
  22. 1 cup agave
  23. ½ cup coconut oil
  24. 1tbls almond butter

  25. • Place all ingredients into the blender until smooth
  26. • Pour over top of frozen cake
  27. • Place in freezer until ready to serve
  28. • Decorate with a few chopped almonds and any nuts of choice
