RAW AVOCADO & TABOULI SALAD
(Sugar Free, Gluten Free, Dairy Free, Vegan)
This salad has a choice of making it 100% raw using soaked raw quinoa or by placing in a pot of hot water to cook in only a few minutes.

Ingredients
  1. 1 or 2 large bunches of fresh flat leaf parsley
  2. 1 small bunch of mint
  3. 1/2 – 3/4 cup quinoa
  4. 1 celery stick
  5. 1 cup Lebanese cucumber
  6. 2 large roma tomatoes or 1 cup cherry tomatoes, halved
  7. 8 shallots
  8. 2 large avocados
Instructions
  1. Wash all vegetables
  2. Soak quinoa for 1 hour in hot water, drain, rinse and squeeze out excess water
  3. Finely chop parsley and mint
  4. Finely slice celery
  5. Seed and dice cucumber into 1 cm cubes
  6. Cut tomatoes into 4, seed and dice into 1 cm cubes
  7. Trim shallots and finely slice
  8. Cube Avocados
  9. Place all ingredients into a bowl and toss – except for avocado
  10. Pour dressing and combine all ingredients
  11. Add the avocado and toss gently ready for serving
Dressing
  1. 1/2 cup cold pressed olive oil
  2. Juice and rind of 2 lemons
  3. 2tbls white wine vinegar
  4. 1 garlic clove crushed, pinch Celtic salt, tsp agave
  5. 2 tsp mustard (optional)
  6. • Place ingredients in a small container with lid and shake well.
