CHICKPEA PATTIES
(Sugar Free, Gluten Free, Dairy Free, Vegan)
I personally like to fry these in coconut oil. Coconut oil is safe to heat without going rancid. You can also use macadamia oil as this is also a stable oil. These patties can be made as a vegan version or with a couple of optional organic eggs if you like.

Ingredients
  1. 2-400g cans chickpeas
  2. 2 large potatoes cooked and mashed
  3. 1 grated medium carrot
  4. 1 medium onion finely diced
  5. 1-2 cloves garlic
  6. 1/3 cup coriander or parsley
  7. 1tbls vegie stock powder
  8. 1/2 tsp Celtic or Himalayan Salt
  9. 20g ground sunflower seeds
  10. 2tbls tahini
  11. 2 eggs (optional)
  12. 1 tsp Onion Salt
Instructions
  1. Combine ingredients in a bowl and mash together.
  2. Scoop half a cup of mixture out and mould with hands to make a round bulky patty.
  3. Dust with a little polenta flour.
  4. Pre-cook patties in a little oil in a frying pan.
  5. Remove and place on a baking tray in the oven and bake for about 20 minutes.
Notes
  1. Best served with salad and top each patty with coconut yoghurt and mint dressing.
