BUCKWHEAT WAFFLES
(Sugar Free, Gluten Free, Dairy Free, Vegan)
Serves with heaps of berries and coconut yoghurt – drizzle with a little raw berry coulis

Ingredients
  1. 1 1/3 cups buckwheat flour sifted twice
  2. 3/4 cup filtered water
  3. 1 cup filtered hot water
  4. 1/2 cup cooked brown rice
  5. 1/2 tsp fine Celtic or Himalayan salt
Instructions
  1. Combine flour and 3/4 cup of water.
  2. Stir to make a paste – set aside for at least one hour.
  3. Place all ingredients including paste into a blender.
  4. Blend thoroughly.
  5. Additional water may be necessary.
  6. Heat a waffle maker.
  7. Place in required amounts and cook until ready.
Notes
  1. Any waffles left over can be placed in the freezer and warmed in the toaster or oven when needed.
