Almond Meal Pancakes with Berries, Berry Coulis & Coconut Yoghurt

ALMOND MEAL PANCAKES WITH BERRIES, BERRIE COULIS & COCONUT YOGHURT
(Gluten Free, Sugar Free, Dairy Free, Vegan)
This pancake is easy to make and goes amazingly well with coconut yoghurt.

Ingredients
  1. 1 cup organic almond meal
  2. 1/2 cup organic coconut flour
  3. 3tbls chia seeds soaked overnight in 1 cup water
  4. NB: if you would prefer to use eggs instead of the chia you will need to add
  5. 3 large organic eggs at room temperature
  6. 1tbls raw organic agave
  7. 3/4 cup organic coconut milk
  8. 1 – 2 tbls coconut oil
  9. 1/2tsp pure organic vanilla powder
  10. 1/2tsp low allergy baking soda
  11. Extra coconut oil for frying
Instructions
  1. Place all ingredients into a blender starting on a low speed and increasing to high
  2. Pre-heat pan and grease with coconut oil
  3. Ladle a spoonful of batter onto the pan about 3 inches in diameter (7-8cm), this will make around 6-8 small pancakes
  4. Cook for a few minutes, until pancakes begin to dry around the edges and bubble on top
  5. lipping over when ready and cook for another few minutes
